It is believed that smoked ribs go well only with pea soup. It's time to dispel this stereotype by stewing potatoes with smoked pork ribs. If you follow the recipe, you get a tasty, fragrant, spicy dish with hints of smoked meat. The total time spent is about 1 hour.

As a container for stewing, you can use a deep frying pan, a cauldron or a pan with thick walls.

Ingredients:

  • smoked pork ribs - 500 grams;
  • potatoes - 1 kg;
  • onions - 2 pieces;
  • carrots - 1 piece;
  • garlic - 3 cloves;
  • tomato paste - 1.5 tablespoons;
  • bay leaf - 2 pieces;
  • vegetable oil - for frying;
  • water - 1-2 glasses;
  • salt, seasonings and spices - to taste.

Ground paprika, hot red pepper and ground black pepper go well with potatoes and smoked ribs.

Recipe for potatoes with smoked ribs

1. Cut the ribs into portioned pieces, leave the bones, they give their own touch of taste.

2. Wash, peel, cut potatoes into large slices, grate carrots, chop onion and garlic into small pieces or cubes.

3. Heat the cooking container with vegetable oil. Put onions, garlic and carrots. Fry over low heat until vegetables are soft and translucent.

4. Add tomato paste and spices. Mix. Fry for 2-3 minutes.

5. Put the ribs and potatoes in a container, pour water (should cover a layer of potatoes), mix lightly.

6. Cover with a lid, simmer the ribs with potatoes for 30 minutes. Salt, add bay leaf and peppercorns (optional).

7. Simmer under the lid for another 10-15 minutes until cooked (potatoes are easily pierced with a fork).

8. The finished dish can be slightly cooled and immediately served to the table, but it is better to let it brew for a couple of hours, and then heat it up again, then the aroma will fully open.

I think that each of you has a favorite dish from childhood or from the time when you lived with your parents and your mother spoiled you with sweets. And then, when you grew up and left to live far from your parents, your mother, knowing about your arrival and that you love this dish, always tries to cook it for your arrival. Usually this dish is not necessarily a masterpiece of culinary art, but food prepared with love by mother's caring hands. Unfortunately, I can’t often visit my mother, but the dish that my mother always cooks for me, I often cook now in my family.

So, I invite you to cook with me a very tasty hearty and homemade dish "Potatoes with pork ribs according to my mother's recipe."
To prepare this dish, we need the following set of products: pork ribs, potatoes, carrots, onions, olive oil, ground black pepper, parsley, salt, bay leaf.

Peel the potatoes, rinse under running water and cut into fairly large pieces.


Put a frying pan on high heat and pour a spoonful of olive oil into it. When the oil is hot, add our potatoes to the pan. Fry potatoes until golden brown. We need this so that the potatoes do not boil when stewing. After frying, the potatoes should remain raw on the inside, but browned on the outside. Take the potatoes out of the pan and transfer them to a plate.


Put the pork ribs in the same pan, salt, pepper and fry also on very high heat.


The meat must be fried until caramelized or golden brown. Since pork ribs have their own fat, then you have it and stand out in the pan. We take out the fried pork ribs from the pan. We don't turn off the fire.


Cut the onion into small cubes, rub the carrots on a coarse grater. In the pan in which we fried the ribs, add the remaining olive oil and fry the carrots and onions until the onions are golden.

We shift the fried pork ribs into a large cauldron or deep pan with a double bottom, and send the previously fried potatoes there.

Add the fried onions and carrots to the cauldron with all the released fat and the remaining oil from the pan.

Separately, in an electric kettle, boil half a liter of water and fill our ingredients with this boiling water so that it completely covers the contents of the cauldron.


We measure the required amount of spices: salt, ground black pepper and bay leaf.

Add spices with bay leaf to the cauldron and mix well, taste the resulting broth for salt and, if necessary, add salt. We cover the cauldron with a lid, let the broth boil, reduce the heat to medium and cook potatoes with pork ribs for about an hour until the ribs are fully cooked (when the meat can easily be separated from the bone). All this hour of waiting, you will be busy with the fact that you will have to drive away household members from the cauldron who will come running to the aroma and will try to take a sample.

The finished dish should be thick, rich, some of the potatoes will boil a little, but will still be in the form of pieces, the meat will be fragrant and tender, and the gravy will be thick and tasty.
Arrange the potatoes with the ribs on serving plates, sprinkle with fresh parsley and serve with hot freshly baked bread. Praises of relatives are provided to you.
