Yeast pies with berries are delicious, simple and original. Most often, yeast pies are prepared, as they are more satisfying, dense. They don't fall apart and last a long time. Therefore, I decided to include here a recipe in which one of the minor features is frozen berries.

  • Potato starch - 1.5-2 tbsp. spoons;
  • Sunflower oil - 3-4 tbsp. spoons;
  • Eggs - 2 pcs.
  • Water - 60 ml.
  • Frozen berries - 300 g.
  • Salt - a small pinch;
  • Vanilla sugar - 1-2 teaspoons;
  • Sugar - 6 tbsp. spoons;
  • Sour cream (any fat content) - 60 ml.
  • Wheat flour - 290 g.
  • Dry yeast - 1-1.5 teaspoons;
  1. Mix dry yeast in water and wait 10 minutes until foam appears.
  2. In another cup, beat 3 tablespoons of sugar with one egg and sour cream. Add salt, vanilla sugar, water with yeast and mix again.
  3. Gradually add flour and knead a thick elastic yeast dough for a pie. Now you can forget about the test for the next 20-40 minutes. It should get bigger and bigger.
  4. While the dough is gaining volume, you can do the berry filling. Everything is extremely simple in our case.
  5. Berries should be thawed, excess juice drained. If the berries are with stones, then you need to separate them.
  6. Mix starch with sugar. Sprinkle the resulting mixture with the berry mass and mix gently with a spoon. The frozen berry filling is ready.
  7. Divide the dough into two pieces, one slightly larger than the other. The larger piece goes to the base of the pie, the smaller one goes to the top layer.
  8. Sprinkle the table with flour so that you can work more conveniently. Roll out the larger piece of dough thinly with a rolling pin.
  9. Grease a baking sheet with oil. Lay the dough, having issued the walls of the cake.
  10. Spread thawed berries in an even layer.
  11. Roll out the other dough thinly and divide into strips that need to cover the berries. It should be a mesh. Although you can just cover with a layer of dough. Then you get a closed pie.
  12. Break the remaining egg, separate the yolk. Beat the yolk with a fork or whisk, grease the pie with it.
  13. Heat the oven to 180-190 degrees. Cake baking time - 30-40 minutes, until golden brown.

Pie with frozen berries on sour cream

Delicious creamy sour cream pie with berries. Tender, flavorful and easy to prepare. In general, sour cream is an optional ingredient. You can cook without it. It will be just a berry pie.

  • Frozen berries - 350 g.
  • Flour - 220 g.
  • Sugar - 150 g.
  • Chicken eggs - 3-4 pcs.
  • Baking powder - 1 teaspoon;
  • Butter - 180 g.
  • Thick sour cream - 200 g.
  1. Mix butter with sugar (100 g). You can use a mixer.
  2. Beat eggs into butter, continue mixing.
  3. Combine flour with baking powder, add to eggs and knead a dense dough. It turned out shortbread dough.
  4. Grease a baking dish with oil, put the dough there.
  5. Defrost the berries, get rid of excess juice. Mix with remaining sugar and sour cream.
  6. Put the berry mass on the dough.
  7. Preheat the oven to 200 degrees, the baking time for the cake is 20-30 minutes. Until blush.

Layer cake with frozen berries

Crispy puff pastry pie with berries. You can't buy such delicious food in the store!

  • Ready-made puff pastry (sweet) - 500 g.
  • Thawed berries - 350-400 g.
  • Sugar - 7 tbsp. spoons;
  • Butter - 20 g.
  • One chicken egg;
  1. Puff pastry needs to be thawed, unrolled and rolled out with a rolling pin. You should get two layers.
  2. Grease a baking sheet with oil. Lay out one sheet of dough. Press well, arrange the sides of the cake.
  3. Berries get rid of water, seeds and all sorts of branches, leaves. Mix with sugar.
  4. Lay the berries in a single layer on the base of the cake.
  5. Cover with the second piece of dough, pinch the edges. Make a few small holes in the top layer with a fork or knife. This is to ensure that the steam comes out calmly and does not inflate the cake.
  6. Send to a preheated oven (190 degrees) for 20-30 minutes. The dough should be golden brown.

Puff pastry pie with frozen berries is ready!

As you can see, this cake is very easy to prepare and does not require much time. Of course, provided that you have purchased puff pastry, well, or you once made it beforehand.

Sand cake with frozen berries

The basis of this cake is a special dough, shortbread. Thanks to shortcrust pastry, the cake has a porous structure, crunches well and lies pleasantly in the stomach.

  • Frozen berries - 1 cup.
  • Jam or jam - 3 tbsp. spoons;
  • Salt - a pinch;
  • Baking powder for dough - 0.5 tsp;
  • Starch - 70 g.
  • Flour - 200 g.
  • Sugar - 100 g.
  • Chicken egg - 1 pc.
  • Butter - 130 g.
  1. Crack an egg into a bowl, add sugar. Beat with a fork or whisk.
  2. Add warm butter, starch, salt, baking powder, flour. Knead with your hands a firm yet elastic dough.
  3. Sand dough is ready. Now it needs to be divided into two pieces, one slightly larger than the other. Put the smaller piece in the freezer for 15-20 minutes.
  4. Grease the mold with oil. Roll out a larger piece of dough, lay it in a mold, making out the sides.
  5. Now you need to spread a layer of jam. Place berries on top.
  6. Remove the dough from the refrigerator, grate it on a coarse grater so that the entire surface of the pie is covered with these small pieces.
  7. Place the cake in a preheated oven at 190 degrees for 25-30 minutes. The cake should turn yellow but not brown. I say this so that you do not dry it out and burn it.

Cheesecake with frozen berries is a wonderful dessert! Airy delicate pastries that go very well with tea or coffee.

  • Baking powder - 1 teaspoon;
  • Egg - 1 pc.
  • Sugar - 120 g.
  • Butter - 140 g.
  • Wheat flour - 200 g.

How to make this pie

  1. The first stage is the dough. We use the appropriate ingredients and their proportions.
  2. Mix flour with baking powder. Cut the butter into pieces, add to the flour and grind. Drive an egg into it, add sugar. Knead the dough.
  3. Now you need to prepare the berry filling. Mash cottage cheese with a fork, mix with sour cream, eggs, sugar. It is best if you beat with a blender, well, or with a mixer.
  4. Grease a baking dish with oil or line with paper. Lay down the dough.
  5. Fill with curd. Lay the berries on top, which need to be slightly drowned.
  6. Preheat the oven to 180-190 degrees. Bake the cake for about 30-40 minutes.

Quick pie with frozen berries

Want to whip up a berry pie? Try this frozen berry pie. Lush, tender and very juicy due to the fact that the dough is cooked on kefir.

  • Kefir - 2 cups;
  • Sugar - 1-2 cups. Depending on your sweet preferences.
  • Eggs - 4 pcs.
  • Soda - 1 teaspoon;
  • Wheat flour - 650-700 g.
  • Vanilla sugar - 2 teaspoons;
  • Frozen berries - 400-500 g.
  1. Beat eggs with sugar, add vanilla sugar. Pour in the same kefir, add soda. Add flour, mix well until smooth. The dough should not be too thick, but not too liquid either.
  2. Berries can be thawed in advance, sorted out. Drain excess juice.
  3. Grease a baking dish with oil. Pour in half of the batter. Lay a layer of berries and pour over the dough again.
  4. Preheat the oven as standard, to 180-190 degrees. This cake is baked for about 40-60 minutes. Look at the color and texture. You can check the readiness with a toothpick or a match. They poked, pulled out - did the dough stick? So the cake is not ready yet.

Soon, very soon, everything around will turn green and will delight us with bright colors and long-awaited flowering. And then, before we even look back, summer will come to visit. And, as always, it will not come empty-handed, but will pamper us with an abundance of all kinds of vegetables, berries and fruits.

Its recipe is quite simple, you will need the most ordinary products and very little time to prepare the dough and send an open pie with berries to the oven. And do not worry that something will not work out - it will not rise or bake.

Ingredients:

(for a round shape with a diameter of 20 cm)

  • 100 g butter;
  • 130 g of sugar;
  • 2 eggs;
  • 1 tablespoon of baking powder;
  • a pinch of salt;
  • 130 g flour;
  • 200-300 g of berries (I have currants and raspberries).

How to make an open pie with berries:

Butter is either taken out of the refrigerator in advance, or softened in the microwave. Put butter and sugar into the bowl of a food processor or mixer.

Mix with a mixer until a homogeneous mass is obtained.

Add eggs, beat everything together.

We put the baking powder and salt, about a third of the flour. We mix.

Gradually add the remaining flour, all the while working with a mixer. The dough should become like very thick sour cream.

Line a baking dish (I have one with removable sides, but you can use any other) lined with oiled baking parchment. Pour the dough into the mold and smooth the top. Everything, with the dough for an open pie with berries, we completely figured it out.

Now it's the turn of the berries. I made a pie from summer-frozen berries, but if you cook in season, then, of course, take fresh ones. Berries from the freezer must be taken out in advance and thawed, put in a colander to drain the juice. Then we arrange the berries on the dough. With a spoon, lightly press the berries into the dough (but just slightly, after all, they should remain above the dough).

We bake an open pie with berries for 35-40 minutes at a temperature of 180-190 degrees. We take out the finished cake from the oven, after 10 minutes carefully remove the side and remove the baking paper. Cool down to room temperature.

Sprinkle the cooled open pie with berries with powdered sugar.
