Pancakes stuffed with red fish are a real delicacy. For convenience, it is recommended to cut them into small rolls.

This snack is not only tasty, but also very healthy, as fish contains essential microelements and vitamins. For cooking, it is recommended to use lightly salted pink salmon, salmon or salmon.

In European countries, this dish is called “Russian”. Stuffed pancakes have been cooked in Rus' since ancient times. During this time, a huge variety of recipes appeared. In this article we will look at one of the options.

Recipe for pancakes filled with red fish and cream cheese

Maslenitsa is just around the corner, so every housewife should know how to cook pancakes. We will use one of the simplest recipes. The whole process takes just a few minutes.

Ingredients:

  • 3 chicken eggs.
  • 1/3 tsp table salt.
  • 3 tbsp granulated sugar.
  • 0.5 liters of milk.
  • 2 tbsp unscented sunflower oil.
  • 300 g of first-grade flour.

Step-by-step preparation

Prepare a deep container, break eggs into it, add sugar and salt. Just don’t overdo it with granulated sugar, otherwise the pancakes may burn and stick to the pan. Mix the ingredients with a kitchen whisk.


At the next stage, pour milk into the egg mixture, which should first be heated.


Don't forget to add vegetable oil.


While constantly stirring the mixture, add wheat flour in small portions. Mix the mixture thoroughly until smooth.


Heat a frying pan on the stove, then grease the bottom with a piece of vegetable oil. It is recommended to use a frying pan with low sides to make it easier to flip and remove pancakes.


Gently spread the dough over the entire surface.


Fry the pancakes on both sides. Approximately every 3-4 pancakes, grease the bottom of the pan with butter.


The baked goods are ready, now you can start preparing the filling.


We will need cream cheese, parsley and smoked salmon. Grease one side of the pancake generously with cheese.



Place the second pancake overlapping and also spread cream cheese on it.


Cut the red fish into thin pieces and place on greased baking sheets.


Sprinkle fresh parsley on top.


Now roll it tightly into a roll.



Now all that remains is to cut the roll into small pieces.

2. Pancakes with herring

1 kg herring fillet 5 eggs 2 tsp. vinegar 3 onions ground black pepper - mayonnaise or sour cream to taste

Pass the herring and onion through a meat grinder. Boil and chop the eggs. Combine all filling ingredients and mix thoroughly. Place the minced meat on the pancakes, roll them in any way and bake for 5 minutes in an oven preheated to 180 degrees. Place the finished pancakes on a dish and brush with sour cream or mayonnaise.


3. Salmon pancakes

300 g salmon fillet 300 g processed cheese spinach leaves for garnish

Grease each pancake with melted cheese, place a piece of fish fillet, roll and bake in the oven at 180 degrees for 5-7 minutes. Serve garnished with spinach leaves.

4. Shrimp pancakes

50 g hard cheese 300 g shrimp 2 tomatoes sour cream/mayonnaise - to taste

Boil the shrimp, let them cool, and then peel them. Finely chop the tomatoes into cubes. Combine filling ingredients. Grease each pancake with sour cream or mayonnaise. Place the filling in the center of each pancake and roll it up.

5. Pancakes with sour cream and red caviar

125 g red caviar 20 g sour cream 60 g butter 25 g fresh dill

Melt the butter and brush each pancake with it before adding the filling. Finely chop the dill and mix it with sour cream, then add the caviar and mix again. Roll the pancakes any way you like and serve.

6. Pancakes with spinach and lightly salted red fish

250 g frozen spinach 100 g lightly salted red fish 100 g feta 1 tbsp. olive oil salt and pepper to taste hard cheese (preferably Parmesan) - for decoration

Fry the spinach with a tablespoon of butter, add salt and pepper to taste, and cool before starting to form the pancake filling. Cut the fish into slices. Crumble the feta. Place the filling on the pancakes and roll them up.


7. Pancakes with canned pink salmon and champignons

1 can of canned pink salmon 200 g of canned champignons 1 onion 2 tbsp. vegetable oil

Cut the champignons and fry with onions. Mash the pink salmon with a fork. Combine the ingredients and stuff the pancakes with the resulting mixture.

8. Haddock spring rolls

500 g haddock 3 eggs 1 onion

Boil the haddock in salted water. Remove bones and mash with a fork. Finely chop the onion and fry in a frying pan. Boil and finely chop the eggs. Mix all ingredients and stuff pancakes.

9. Pancakes with egg and smoked capelin caviar

180 g smoked capelin caviar 3 eggs

Boil and finely chop the eggs. Cool and mix with caviar paste. Stuff the pancakes with this mixture and roll them up.


10. Pancakes stuffed with mussels

For the filling: 200 g mussels 1 onion 150 ml dry white wine vegetable oil for frying dill salt and pepper to taste

For the sauce: 300 ml sour cream, dill, garlic, salt and pepper - to taste

Boil the mussels. Cut the onion into cubes and fry in vegetable oil until golden brown. Place the boiled mussels in a frying pan with the onion, pepper, add dill and pour in wine. And simmer for several minutes until the wine has noticeably evaporated.

To prepare the sauce, add finely chopped dill, garlic and ground black pepper to the sour cream. Pour the mixture into the saucepan and cook for another 2-3 minutes after boiling.

Take a pancake. Spoon the filling into the center. Gather the edges of the pancake to form a bag and secure it by tying it with an arrow of green onion, a sprig of dill or a strip of pancake. Serve with sauce.

25 g margarine,
125 g premium wheat flour,
1 glass of milk,
1 tablespoon sugar,
1 teaspoon salt,

It is not at all difficult to prepare delicious dishes from initially good ingredients. After all, no one will deny that pancakes are delicious, and even more so in combination with red fish. If someone is too lazy to bother with frying pancakes, and this is really not a quick process, then you can try lavash roll with salmon.
This option is much faster, but you will have to sacrifice the “Russian spirit” (in the best sense), because the combination of pancakes, pancakes and pink salmon is a classic of Russian cuisine.
What our ancestors did not cook in Rus': pancake pie, pancakes with pink salmon, baked or stuffed.

Stuffing pancakes You can bake whatever you like, I offer you a recipe for pancakes using fast-acting yeast.
You will need

Ingredients:

  • Flour – 500 gr.
  • Eggs – 1 pc.
  • Milk – 0.5 l.
  • Sugar – 1 tsp.
  • Vegetable oil – 50 gr.
  • Salt – 10 gr.
  • Yeast - 7 gr.

To fill the pancakes you will need:

  • Lightly salted red fish (trout or salmon) – 1 pack. (300 gr.)
  • Soft cream cheese (in tubs) – 1 pack. (200 gr.)
  • Greens (dill) – 1 bunch.

Cooking process:

First, prepare the dough for yeast pancakes:

Pour yeast into warm milk, then all other ingredients. Mix everything so that there are no lumps of flour.

Let the pancake yeast dough sit a little so that the yeast swells.

Bake pancakes in a preheated frying pan.

This is the stack I got. We ate some of the pancakes, and some were filled with soft cheese and salted fish.

Let's prepare the red fish and cheese filling for stuffed pancakes:

Red salted or smoked fish (trout, salmon, coho salmon, pink salmon) must be cut off from the skin (if any), remove the bones from the fillet and cut into long strips.

Finely chop the greens.

We stuff and wrap the pancakes in rolls, greasing the edge of the pancake with soft cheese, placing pieces of red fish on top and sprinkling with dill.

Carefully wrap the pancake with salmon in a roll (you can wrap the pancake in any way at your discretion) and place it in tubes on a plate.

I won’t tell you how to prepare pancake dough. Because every housewife prepares it to her own taste. Today we’ll talk about filling for pancakes.

I’ve already written about two recipes for unusual pancake dough.

Pancakes stuffed with cottage cheese.

I want to say that instead of raisins you can use canned fruits - pineapple, peach, mango, cherry, strawberry. Fresh fruit - to your taste. It can be anything, even berries. And even dried fruits can also be used, pre-soaked.

And also for piquancy, you can add crushed nuts to pancakes filled with cottage cheese. Nuts go well with dried fruits.

For those who are very worried about their figure, cottage cheese can be mixed with ready-made muesli, adding candied fruits for sweetness.

Sour cream and sugar can be replaced with processed sweet cheeses. At the same time, the taste will be tender and creamy. And the cottage cheese will not release much liquid.

If you use this recipe, I would like to note that the cottage cheese will release some liquid when mixed with sugar. In this case, you can simply place the filling on a sieve and allow the liquid to drain.

If desired, ready-made pancakes with filling can be fried on both sides in butter before serving.

Pancakes with cottage cheese can be served with either sour cream or other sweet sauces: condensed milk, thick cream, jam, preserves.

You can also sprinkle pancakes with cottage cheese with powdered sugar. Which will give them a finished look when serving.

For the fish filling, you can use the fish you like. This can be a fillet of red or white fish. The salting method is the same for all types of fish.

Boneless fillet should be cut into strips, salt and pepper and, if desired, sprinkled with lemon juice. And let the fish stand for 2-3 hours.

I used pink salmon fillet, which I marinated as described above. Don't be alarmed if the fish fillets turn white; this is a reaction to the lemon juice. You can also add chopped herbs to the filling. Dill goes very well with fish.

Now we stuff the pancakes with the prepared filling.

You can serve pancakes in different ways. I decided to put the filling, not inside the pancakes, but on top, simply wrapping the edges of the pancakes. And garnished with lemon.

Banana filled pancakes with hot chocolate.

In this section of my master class, I will describe the filling with banana. And I’ll tell you how to make hot chocolate sauce at home. Which in the future can be used not only for pancakes.

Peeled the banana and cut it in half lengthwise. Each banana half was wrapped in a separate pancake. As shown in the photo below.

For this we need:

  • bar of creamy or dark chocolate – 90-100 g;

Prepare hot chocolate in a water bath. We break a chocolate bar and put it in a bowl in which we cook and slightly thaw. Then add cream. Mix thoroughly until smooth.

Hot chocolate is ready. When hot, it flows well from a spoon, making it easy to decorate dishes. As hot chocolate cools, it takes on the consistency of soft butter. This oil can be used for sweet sandwiches.

To add spice to hot chocolate, you can add various additives. In the form of crushed nuts, candied fruits, dried fruits, or all at once.

Cut the fried banana in half. Place on a plate. Drizzle with hot chocolate and sprinkle with powdered sugar if desired.

If you don't like fried banana, you don't have to fry the banana pancakes. Just serve with hot chocolate.

Thus, for one type of filling, with cottage cheese, with fish or with banana, you can use several options for additives. This results in a variety of flavors.
