We need softened butter, so it is better to remove it from the refrigerator an hour before preparing the delicacy. Or put it in a glass and place the glass in warm water, then the butter will soften faster.

Softened butter beat together with powder, but you can also beat with sugar. However, then you need to make sure that all the sugar has dissolved. I make powdered sugar in a coffee grinder, but you can buy it ready-made at the supermarket.

Now beat the butter and powder into a fluffy mass using a mixer, and add vanilla sugar or vanillin. Next, add three eggs, but you need to add them one by one, while mixing.

After adding raisins to the dough, do not use a mixer.

After this, pour boiling water over the raisins. Then we squeeze it with a paper towel and add it to our dough.
Stir with a spoon until the raisins are completely distributed throughout the mixture.
Now add a pinch of salt and sift the flour using a sieve. Add flour in parts, while mixing the contents.
At the end you need to add baking powder and finally mix everything. Our dough is ready.

Second stage: baking

Now let's prepare the form. You can bake in a large pan to get a simple cupcake, or you can bake portioned cupcakes in small pans. Grease the mold with butter. This procedure can be done using vegetable oil, but it seems to me that it will taste better with cream. After this you need to sprinkle it with a little flour.

Then you need to make a small cut in the middle. Wet a spatula or knife in water and draw a strip down the center.
Bake in a preheated oven at 160 ºC. Cooking time – 60 minutes. You can check the readiness of the cupcake using a wooden toothpick. It should come out of the cake dry. After baking, it is better to leave the cake in the oven to cool, then it will be easier to remove it from the mold.

You can also cook them in the microwave; the cooking time will take much less - about fifteen minutes. The mode should be set to 750, and you need to bake for no more than seven minutes! However, in this case the cupcakes will not be as golden brown as when baked in the oven.

Raisin cupcake

We suggest making a quick kefir cake with raisins. Everyone will like this delicacy, and children will especially appreciate it. The ingredients needed for cooking are the most common ones, and they can be found in any refrigerator.

You will need a glass of kefir (the fattier the kefir, the tastier the baked goods will be), half a glass of sugar, two eggs, a pinch of salt, soda or baking powder (teaspoon), margarine or butter (about 150 grams), vanillin, 50 grams of raisins, three hundred gram of flour.

Grind butter/margarine with sugar, beat in chicken eggs. Add vanillin, baking powder (if you use soda, you don’t need to quench it with vinegar, kefir will handle it on its own), kefir, and beat with a whisk. Lastly, add the flour and raisins (soaked for ten minutes and dried).

The resulting dough should be poured into the mold and baked for about half an hour.

Preparation

In a metal enamel bowl, mix, heating, milk (kefir), butter (margarine), eggs and sugar until smooth.

It is better, of course, to use butter, but if you decide to add margarine to the dough, under no circumstances defrost it in microwave oven- when defrosting at the lowest temperature, my briquette exploded and stained all the walls of the microwave. Now I carefully heat the entire liquid fraction with butter (margarine), stirring, over gas stove on an open fire. You can, of course, use a water bath, but it is more difficult and takes longer.

Flour with baking powder ( baking soda) sift through a special mug-sieve or a regular sieve. If you use a sieve mug, you can sift directly into the liquid fraction. Turn on gas oven, set the temperature regulator to 180-200ºС. Grease a frying pan or baking dish with oil and begin mixing the liquid fraction with a mixture of flour and baking powder (baking soda).

Place the finished dough in a frying pan or mold and, when the oven is warmed up, set to bake. Baking time - 40-50 minutes. We check the readiness as usual: pierce it with a knife or a sharpened wooden stick and if the dough does not stick, then it is ready.

If you bake a cake in regular frying pan without non-stick coating, it can be cut with a knife directly in the frying pan, both hot and cold. In order to remove the entire cake from the mold, it is better to wait until it has cooled so that it does not fall apart when removing.

Fillers and flavors

Cocoa powder, vanilla sugar or crystalline vanillin, nuts, raisins, candied fruits, dried apricots, and cinnamon can be used as fillers and flavorings.

Sift cocoa powder, vanilla sugar, cinnamon along with flour and baking powder (baking soda). Pre-dissolve crystalline vanillin in a small amount of vodka. Add nuts, raisins, candied fruits, dried apricots at the very end of kneading.

Airy cupcake

Who said butter is better than margarine? Actually this is not true. First of all, we look at the fat content of the product. Baked goods made from 80% margarine are much better than from butter, or rather, an incomprehensible product with 50% fat.

In order for candied fruits, raisins and other pieces to be evenly distributed in the dough, they must first be mixed with flour, and only then combined with the liquid mass.
